Kefalotyri

Kefalotyri is a popular and well-known cheese, having its roots in the Byzantine era being the oldest hard Greek cheese. Kefalotyri Tripoli is characterized by its rich aroma, and color, with a compact structure and small holes. It is made in three different versions: from 100% sheep’s milk, from 100% goat’s milk and from a mixture of cow’s and sheep’s and goat’s milk. It is consumed as a table cheese, in cheese pies and as a saganaki.
